“Peanut Butter” Fudge!

Supercharge your gut with this “peanut butter” FUDGE! As you know, I don’t eat peanuts, so I used Organic Sunbutter (so addicted to this stuff!) and just 3 other ingredients (Vital Proteins being one of them – essential for the fudge to firm and of course Gut Health! It also adds tons of protein). The reason it’s so dark is because instead of honey I used Blackstrap Molasses (super high in iron!) but honey will also work. You KNOW you want to……DO IT!

Ingredients:
1/2 cup Organic Sunbutter
3/4 cup water
2 Tbsp date syrup, honey, or blackstrap molasses
2 scoops Vital Proteins grass-fed gelatin

Directions:
1. In a small sauce pan, heat Sunbutter, water, and sweetener and stir constantly until well mixed and steam begins to rise (do not boil).

2. Transfer mixture into a blender (I used my Vitamix) and turn on the lowest speed.

3. While blender is on low, add in gelatin. Secure lid and adjust speed to medium and blend a few seconds.

4. Pour mixture into a small glass dish and refrigerate a few hours until firm.

*Blackstrap molasses is dark, is using honey the color will be lighter.
