Peanut Butter-less Whoopie Pies

No chocolate. I repeat, NO chocolate was used in the making of these “Peanut Butter-less” whoopie pies. Not to mention no nuts either! Enter the magic of Carob powder and of course Sunbutter to create that “peanut butter-y” flavor and texture. These cookies came out super moist (definitely not dry) and honestly I could eat them without the filling…but I’m extra so I had to fill them! LOL

For the ends:
2 eggs (or flax eggs)
1/2 cup Organic Sunbutter
1 scoop of my Nuzest Probiotic Vanilla Protein
1/3 cup carob powder

For the filling:
1/2 cup of Greek yogurt (I used Fage. It has the thickest consistency)
3 heaping Tbsp of Organic Sunbutter

Method:
1. Pre-heat oven to 350 F.
2. In a separate bowl, mix eggs and Sunbutter
3. In another bowl, mix my protein and carob powder. Then combine the two mixtures to create a batter.
3. Scoop into balls and bake for 12 minutes.
4. While cookies are baking, mix filling ingredient with a spoon (do not blend) then place in freezer. Once cookies are cooked AND COOLED, remove filling from freezer as assemble.
