One of the easiest pastas to digest on the market. I used Pastariso Foods ONE INGREDIENT White Rice Elbow Pasta (my friend owns the company and I had the privilege to explore their 100% gluten free dedicated facility right here in SoCal!) It’s not only about the top quality ingredients they use, but also what they DON’T use! (no gums, no soy, no bean flour, and of course no gluten).
White rice is easier to digest than brown rice, so naturally Pastariso Foods White Rice Pasta is easier to digest too (and the texture is spot on! Not gummy, and cooks perfectly!) They currently only sell direct from their site, and worth the $2.99 box!

1 box of Pastariso Foods White Rice Elbow Pasta (it’s just one ingredient!)
1 small butternut squash (or 1/2 large)
1/3 cup of Organic Sunbutter
1 cup of water
Trader Joe’s onion salt to taste
Roast butternut squash until tender (about 1 hour). Remove skin and seeds and place cooked squash in a high speed blender with Sunbutter and water. Puree until smooth. Add desired amount of onion salt to taste and blend again. Set sauce aside.
Boil pasta in water for 5 minutes (you want it to be a bit undercooked) then mix in sauce and heat on low until desired temperature.
