
Roti Wraps may become the new thing – at least in our house! This is one of those throw together meals that surprisingly become a repeat because it’s so quick and easy with flavors and textures of a little crunchy, a little creamy, a little sweet and a little savory – and when you bite into it, you get all those flavors and textures come together in one symphony.
And hot tip, mashing avocado with a potato masher is a game changer if you want to get the perfect texture of mashed but still chunky (bye bye fork!) – plus it’s actually faster!
Don’t like tuna? Use chicken!

Serves 2
Ingredients:
– 2 cans of quality low mercury wild tuna (or shredded cooked chicken)
– 1/2 cup of plain greek yogurt (or mayo)
– 1 small apple, finely diced
– handful of raw pecans, finely chopped
– S & P to taste
– 2 Roti wraps (I used their golden curry)
– 1 ripe avocado, mashed
Method:
Add first 5 ingredients in a bowl and mix well. Adjust taste if needed. Place 1/2 of the tuna mixture onto a wrap, then add 1/2 of the mashed avocado and roll up.
