Quinoa Carrot Cake (vegan, paleo, nut free)

I made this grain-free Quinoa Carrot Cake in my Air Fryer in 7 minutes! I just couldn’t wait to post any longer, and since I already posted the 2 ingredient “cream cheese” frosting to pair with it, I figured why not? Get on this stat yo!

FYI – It may look like a ton of ingredients, but all you have to do
is mix them all together and bake!

Ingredients:
2 cups cooked white quinoa (about 1/2 cup uncooked)
1/2 cup carrot puree (steamed then pureed)
1 cup freshly grated carrots
1/4 cup coconut flour
3 Tbsp flaxmeal + 8 Tbsp water (let sit for 5 minutes to gel)
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
2 Tbsp honey or blackstrap molasses
Raisins to taste

Directions:
1. Combine all ingredients in a large bowl and mix well.

  1. Coat desired baking dish(es) with coconut oil.

  2. Bake in air fryer for 7 minutes at 350 F. *If you don’t have an air fryer, bake in oven for 40-45 minutes at 350 F.

  3. Frost with my 2 ingredient frosting.
