I did a little take on pineapple peanut teriyaki boats….but vegan and WITHOUT PEANUTS!
The steamed rice absorbs this sticky, sweet, and salty sauce perfectly (and did I mention you only need 3 simple ingredients?!)

“Peanut” Teriyaki Sauce
*Feel free to double or triple recipe
3 Tbsp of organic Sunbutter
1/4 cup date syrup (maple syrup or honey can be subbed)
3-4 Tbsp cup coconut aminos (or tamari)
Mix above ingredients well (even better to blend it in a small bullet blender)
For the Pineapple Boats
Slice and hollow out pineapple (I like to freeze the inside for smoothies). Place cooked white rice first, then preferred protein (chicken, steak, fish) or veggie of choice (here I did one with mushrooms and the other with cauliflower)
