Sweet Potato French Toast!

I started thinking about all the sweet potato toasts out there…then thought what else do you make with regular toast. Light bulb! French toast! So why not combine the two and make Sweet Potato French Toast!? It was too easy and the idea was too delicious to pass up and not to try. So of course I just had to ASAP!

I didn’t want to just use eggs, but also wanted to make it free from nuts, coconut, and also banana (nothing wrong with them but I know many have allergies to them or cannot consume them for dietary reasons), so I grabbed some Otto’s Cassava Flour I had in my pantry since it’ free from all those things (and paleo!) and the magic happened!

• Paleo






Ingredients:
1 large sweet potato
2 eggs
1/4 cup Otto’s Cassava Flour
Dash of cinnamon

Topping:
Blackstrap Molasses (Click HERE for the health benefits)

Directions:
1. Slice sweet potato then toast until tender (as you would do when making regular sweet potato toast).

2. In a large bowl, whisk eggs then add Otto’s Cassava Flour and cinnamon and mix until a batter forms and no lumps are present.

3. Dredge each toasted sweet potato in batter then cook each side on a heated skillet sprayed with oil or ghee 2-3 minutes on medium heat.
Makes 3-5 slices depending on how large yoru sweet potato is.
