VEGAN “CHEESY” MAC – no nuts, no pumpkin, no fake cheeses, and no gluten!

And if you’ve never had white rice pasta you better get on that! White rice is easy to digest, doesn’t give me any gas as bean based pasta can from time to time, and the texture, quality, and sourcing of this Pastariso Foods is 100%…..I give it a 10/10.

Ingredients:
1 bag of Pastariso Foods White Rice Elbow Pasta
6 small golden potatoes
3 long carrots
1/2 cup diced canned tomatoes (with juice)
1/4 cup of Organic Sunbutter
1 – 2 tsp of white pepper
Sea salt to taste

Method:
Wash potatoes and carrots and boil both in water until you can pierce a fork into them. Allow potatoes to cool, then remove skins (they should easily peel away if you do this when they’re still warm). Add peeled potatoes, steamed carrots, diced tomatoes, Sunbutter, and white pepper to a blender and puree until creamy. Taste, then add salt to taste. Cook Pastariso Foods White Rice Elbow Pasta according to directions (they cooked in about 2 minutes!). Drain water, then mix with “cheese” sauce and enjoy!
