Forget Toast Tuesday, how about Tostones Tuesday? Remember that random plantain you saw in my Instagram stories last week? I put it to good use and made “toastones”! Drizzled with Organic Sunbutter (it’s Nut Free for those that need that option), raw honey, greek yogurt, and a few walnut pieces.
1. Cut plantain lengthwise then in half to create 4 parts.
2. Heat a pan with a little coconut oil and add a dash of cinnamon IN the pan of coconut oil (trust me).
3. Sear plantains and allow them to cook with a lid over the pan to capture heat, then top with all the goods!
