Watermelon Mousse!

Who saw this Watermelon Mousse on my Instagram?

It will be the talk of the town and the center of your summer gatherings! It’s super easy to make, requires minimal ingredients, and it’s actually healthy! So grab your girlfriends, get the kids involved, and have fun!



Notes:
You can swap out the coconut milk for greek yogurt for a lower fat version if not dairy free.
If you use the greek yogurt option, it will turn out pink, but less firm.
The coconut milk option has a slightly more firm texture.

Ingredients:
1 small watermelon
1 cup of canned coconut milk (per 1/2 of watermelon)
3 Tbsp of Further Food grass-fed gelatin (per 1/2 of watermelon) – code: LILSIPPER
mini chocolate chips

Method:
Cut the watermelon in half and scoop out the inside. Blend everything you scooped out (do not add water) and reserve what you’ve blended. Add 2 cups of your watermelon puree to your blender with 1 cup of canned coconut milk and 3 Tbsp of gelatin and blend again. Pour everything back into your 1/2 hollowed out watermelon (best to place watermelon in a cereal bowl to keep it from tipping over) and refrigerate at least 3 hours or until pureed has firmed. Repeat above with other side of watermelon. Once puree is firm, slice and add mini chocolate chips to mimic watermelon seeds and enjoy!
