Zero Carb Hummus!

ZERO CARB HUMMUS recipe made without cauliflower!

I’m not anti-cauliflower (but I know many of you are! lol) and to be honest, I just love experimenting with different foods that I can still use to create healthy alternatives…especially for those following a low carb lifestyle. This is perfect to serve at any gathering or bring to the party as a guest!

How is this zero carbs?
Lupini beans contain the exact same amount of fiber as they do carbs, so the net carbs = 0.
Ok, yes a red bell pepper does contain 5 g of net carbs, so technically there are 0.625g of a carb per serving. But I honestly don’t think a bell pepper contributes a carb….and if you do, you can leave it out!

Why no tahini?
This is a personal preference…I actually hate the taste of tahini! Haha! And this recipe has so much flavor and creaminess already, I didn’t feel it even needed it. But if you are a tahini lover, you can certainly incorporate it into this recipe.

 

 

Servings: 8

Ingredients:
– 2 cups of cooked lupini beans *See notes below
– about 1/4 cup of quality olive oil
– 1/2 cup water
– freshly ground pepper to taste *see notes below
– 1 roasted red bell pepper (fresh or jarred)

Garnish (optional)
– additional olive oil
– red pepper flakes

Serving suggestions
– sliced cucumber
– carrot sticks
– hard boiled egg whites
– meat chips
– spread on toast
– fill turkey slices and roll up into pinwheels

To prepare the hummus:
Add beans, olive oil, and water to a high speed blender and blend until creamy (you may need to stop periodically and scrape down the sides then continue blending depending on the blender you have). Add pepper and your roasted bell pepper and continue blending until you achieve a thick, creamy texture. transfer to a plate or bowl, smooth out and create a circular ring, then add an optional additional drizzle of olive oil and garnish red pepper flakes.

*Best served chilled

NOTES:

*I recommend Brami Beans since these don’t contain preservatives as do other prepared lupini beans. You can also buy dried lupini beans and cook them yourself….I have done this and the process is about 2 days of soaking, PLUS you have to peel each single bean! So buying pre-cooked and peeled lupini beans saves you a lot of time in the kitchen.

*Depending on the lupin beans you use, the Brami brand is already pre-seasoned (I like the Mediterranean blend) so you don’t have to add much other seasonings.
