Zucchini Tortillas

Are you guys ready for this? Cinco De Mayo is almost here, so these 2-3 ingredient Zucchini Tortillas must I repeat MUST be made! These are super gut friendly, Paleo, Grain Free, High Protein, and delicious (duh).

 

Tortilla Ingredients:
2 1/2 cups grated zucchini (2-3 med. zuchinni)
2 Tbsp Vital Proteins grass fed gelatin
Seasonings of choice to taste

 

Makes 3-5 tortillas depending on size
Directions:
1. Sweat grated zucchini in a large pot on medium heat (no not add water or oil).

2. Add seasonings to taste.

3. Once zucchini has “wilted” (30-60 seconds in), reduce heat and WHILE stirring, gradually sprinkle gelatin into pot until 2 Tbsp is incorporated.

4. Remove from heat and smash down zucchini in a circle of desired size on a plate lined with parchment or wax paper. Refrigerate at least 4 hours or overnight (best if both sides are covered with paper)

5. Assemble tacos as desired.
NOTE: Best if filled with cold/room temp items as heat will soften gelatin.
